Sausage and Bean Rigatoni

Here’s what you’ll need…

8 ounces uncooked rigatoni pasta

 1 can (15 ounces) white kidney (cannellini), Great Northern, or navy beans, rinsed and drained

1 can (14.5 ounce) Italian-style stewed tomatoes

6 ounces light cooked smoked sausage or turkey sausage, sliced ½ inch thick

1/3 cup finely shredded or snipped fresh basil

¼ cup shaved or finely shredded Asiago cheese (1 ounce)

 Here’s what you’ll do…

  1. Cook pasta according to package directions, drain, cover and keep warm
  2. Meanwhile, in a large saucepan combine beans, undrained tomatoes, and sausage
  3. Heat through
  4. Add mean mixture and basil to cooked pasta
  5. Toss gently to mix (or just stir it…)
  6. Sprinkle each serving with Asiago cheese

BYU Gymnastics

So I’m sitting at home….watching BYUTV……Kaylee is on! It’s the gymnastics meet…BYU vs. Utah. Go Cougs!

(ow) Kaylee just fell off the beam……but she got right back and did great still!

Just as a note….the Utes have some pretty cool outfits……but I’m still cheering for the Cougs!

Normal? Abnormal?

I got home from work today and Ikpeaku was here. I went upstairs and was working on something on my computer. Ikpeaku comes in and she’s standing behind me and…

Ikpeaku: Whoa, are you wearing jeans?
Chloe: yeah.
Ikpeaku: Wait…you’re wearing jeans?
Chloe: yes.
Ikpeaku: can you do that?
Chloe: yep.
Ikpeaku: well stand up! let me see!
(I stand up)
Ikpeaku: WOW! It’s like you have legs!
Chloe: uhm…
Ikpeaku: DANG! jeans? on YOU??
Chloe: yep. I only own two pairs. it’s not very often you see this.
Ikpeaku: I know! I’ve NEVER seen you in jeans!
(we walk out of my awesome room)

Okay so then I’m turning on the TV to record American Idol, and she’s about to go down the stairs, and…

Ikpeaku: do your socks match?
Chloe: (looks down at socks) yeah.
Ikpeaku: your socks match?
Chloe: apparently.
Ikpeaku: wow! what’s your problem today?
Chloe: nothing!
Ikpeaku: Are you okay?
Chloe: yeah
Ikpeaku: are you feeling okay?
Chloe: yes!
Ikpeaku: are you sure?
Chloe: yes!!

Haha i confuse people when i wear jeans and matching socks. it’s great.

Butter

Okay so I love cooking with Shell! I always look forward to our cooking night each week! Today we made Italian Beef Soup, Sweet Cornbread, and Lemon Delight.

We started with the cornbread…and while that was cooking, we made the soup.

Oh, and if you’re ever cooking and you’re not sure what to do…just add a little extra for good luck =) That’s our way of doing things!

Okay so we were eating dinner…and it was delicious! Bill has yet to find a good cornbread recipe, he claims, but I think we’ve found one! It was so delicious!!! And sweet…thus the name “sweet cornbread”

After dinner we began to make the dessert, as usual. Shell is by the microwave and I’m on the other side of the kitchen….and she is about to melt the butter in the microwave. So she opens the microwave and she says “why is there butter in the microwave?” and she proceeds to take out a bowl of butter……and I said “oh, that was for the cornbread” and we laughed as usual, and said our usual “we just won’t tell anyone.” And here I am telling someone. If only you knew of the many other “we just won’t tell anyone” moments….

But the thing is…the cornbread was delicious! So I can only imagine how much BETTER it will be next time when I actually remember to take the melted butter OUT of the microwave and put it INTO  the cornbread mixture!

*sigh* i love us. Shell + Chloe = the perfect chef duo

Moolenium Crunch

Yesterday I had Clara all day. Today I had Clara and Natalie. Tomorrow they return to school. Clara could’ve gone today, but it’s not my decision. Tomorrow I get Lucas back!!! I miss my little buddy!

I babysat for the McKenna’s again…I love those girls! It’s always so much fun when I’m there.

When I got home tonight, Sheila and I watched the Olympics and ate some ice cream to celebrate my BYU excitement!! Sheila had her Ben and Jerry’s Chunky Monkey….and I had my Blue Bell Moolenium Crunch!!!!

MOOLENIUM CRUNCH!!!

Okay so get this….I after I typed “MOOLENIUM CRUNCH!!!” I went to Google and looked up Moolenium Crunch so I could tell you more about how amazing it is. But, naturally, on the page I clicked on, was a advertisement with an UNBELIEVABLE before and after picture promoting some new diet. So I showed it to Sheila and we laughed. So, we read about it and ended up NOT making fun of it. Instead, I became a victim of the diet. 5 minutes and $3 later, my free trial is on it’s way. I’m so stupid. I hope this works. =)

So I open up my email as I’m sitting and watching the Olympics….and I have an email from BYU…and they said that a decision has been made concerning my admission. So I went and looked and…..this is what I read…..

Day Making

Today was wonderful once again.

I made Raspbana’s day.

Lauren Rowbotham made my day.

Here’s why…..so last night I texted Raspbana and asked what she was doing…and she told me she was preparing a lesson…so naturally I asked for what…and she said for Relief Society. She’s teaching for someone…but anyways…so she told me that she was having a hard time getting it to come all together. And then she said that if only she had my lemon cookie recipe, then it wouldn’t matter what she said because everyone would be enjoying the cookies instead of listening to her speaking…but she KNOWS that my lemon cookie recipe is secret! So I wished her luck with her lesson and that was all.

Well, that wasn’t REALLY all. So on my way home I stopped by Kroger and got the ingredients for my lemon cookie recipe. Then I got home and asked Sheila how she felt about skipping church to make cookies! She clearly wanted more information…so I explained…and she obliged.

SO. The next morning we went to church as usual…and after sacrament meeting we rushed back home to make cookies. We showed up at Tomball ward with the cookies……but we had to wait like 10 minutes until their Sunday School got out….so we were waiting in front of the Relief Society room. Meanwhile, a couple people walk by that Sheila knows….and a couple people that I know…and some lady that walked by (neither of us knew her) and was telling us how amazing our outfits were. We felt pretty cool. But that’s probably because we ARE pretty cool. Anyways, and I also saw Preston. He was walking down the hall and I saw him as he turned the corner, so I waved to him and he looked at me incredibly confused and waved slowly…it was great. And then I saw Evan and he seemed less surprised to see me. SO then Raspbana came up and I was SO EXCITED! I showed her the cookies, and SHE became quite excited also! She said I made her day. She tends to say that quite often…

Anywho… as for Raspbana’s lesson….PUT MINE TO SHAME. Seriously! I really loved it. I felt quite inadequate….why can’t I teach like that??

The cookies were a HUGE HIT. But not as big as her lesson, for sure!

So when I got home, I watched some of the Olympics, and then I made dinner. After we ate a DELICIOUS meal, I headed over to the Nicholi.

I had a great time over there, naturally. It’d been WAY TOO LONG. I hadn’t been there for WEEKS and I’d almost forgotten how much I loved it….but I didn’t forget! I said almost…

I had so much fun with Preston and Evan once again. At one point, the three of us were on the floor laughing hysterically about who-knows-what, and once I had composed myself, Raspbana said something along the lines of “when you met me, you didn’t know what you were getting yourself into, did you?” AND I basically said “yeah but I love it!” AND the thing is….it’s so true. When I met Raspbana,  I didn’t know that I would be having the time of my life at the Nicholi with two new “brothers”. ALSO, when I met Raspbana, I did not know that I would soon lose any opportunity to spend time with my own brothers. Having lost my favorite thing in the world (my siblings), it’s absolutely wonderful to have the Nicholi to spend time with. When I’m playing with Preston and Evan, it’s like I’m getting the opportunity to play with Ethan, Tanner, Torin, Quentin, Brigdon, and Sevannah. It makes me so sad that I don’t get so see them. But it makes me so happy to know that I have the Nicholi. And the Schillers. And the Sowers.

Okay so while I was at the Nicholi, Sarah had a surprise for me. Well, it wasn’t from her. It was from someone else. Sarah was just the deliverer. It was from Lauren Rowbotham. Her name sounded incredibly familiar. BUT GUESS WHAT?!?! She made me the most wonderful masterpiece! A true work of art! It’s a picture/drawing/etching/i-don’t-now-what-to-call-it of a flamingo on a unicycle!!!!!!!!!!!!!!!!!!!!!!!!!!!!!! It’s AMAZING!!!! I’m trying to find a frame for it so I can put it up in my newly-decorated amazing room! It goes perfectly! Lauren Rowbotham is so amazing!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!! Lauren made my day.

So to sum up….here’s how the day making went…
